We should better & put forward existing projects using rig.

I propose we add a short curated list on the readme and then have a longer logo list in the docs.

Quick thought before we add this in, should we not add this to the main Rig README.md? A list of who's actually using Rig in prod would be a great selling point but by the time people are looking in the docs, it's highly likely that they have already chosen to use Rig regardless of who's using it

Yes! very good point. Hence why I proposed a shortlist on the readme and then maybe a longer one in the docs.
