Handle schema and energy calc for different datasets

Earlier we has era5 quantiles only and were not dealing with era5_timeseries's download or energy calculations. So the model config file was supporting the era5 timeseries raw files downloads through s3 source under era5 aka era5 quantiles.
So now to support era5 timeseries downloads with energy calculations into downloads we need to handle 4 cases

• ERA5 Timeseries
• ERA5 Quantiles
• Ensemble
• WTK Timeseries
  and come up with a way so to handle energy calculations for all kinds of datasets.
