[in2]: reading POLYGONZ does not work with new pyshp version

• with the newest pyshp (and shapefile) - package version (3.0.2.post1) reading a POLYGONZ shape file leads to an error
• to avoid the error, use pyshp version < 3

1. Wait for pyshp 3.0.3 to be released and available via conda-forge (recommended long-term solution)
2. Temporarily downgrade to pyshp 2.4.1 (the previous stable version before 3.0.x):
   pixi add pyshp=2.4.1

-> Will pin pyshp until this is solved
