Improvements for Uninstall-Software.ps1

- Support searching for both exe and msi products. Current, if you omit `-WindowsInstaller`, it defaults to `0` which means to only filter on exe software. It would be ideal to be able to uninstall any software of any variant.
- Add an exclusion parameter and apply it when searching with `-DisplayName`
