Feature Request - Add the ability to have different senders for various email notifications

We'd really like the ability to have the admin notification email come from the form submitter's email address (or at least have that be the reply to address). We're able to configure this type of thing with regular Forms plugins.

To be honest, we're not fond of the Correspondence feature and we'd want to ability to more easily communicate via email with the form submitter. Right now we're replying to the Admin Notification and changing the To: address.

I don't have an issue with the ask to change the outgoing email addresses, however I'd prefer to understand what the core problem is with the correspondence feature and also fix that.

The reason this feature is implemented in the correspondence style is because the purpose of the plugin is to avoid email back and forth and avoiding you having to cut&paste email content to manage a user request. Using email forms and mailing people by hand in an email client breaks the concept of a traceable and automated workflow, and therefore just recreates the original problem I designed the plugin to address.

If you're able to tell me more about what is not working for you in the correspondence feature, it would help me address it without you having to fall back to using email.
