gen3-client: Update/adapt GitHub Actions workflows for CALYPR #7

Overview ⚙️
Temporarily disabled all GitHub Actions workflows inherited from the upstream cdis-data-client repo to avoid repetitive failure messages.
Ideally these workflows would either be updated (or adapted) to suit the setup/architecture of the CALYPR system (e.g. removing all AWS components used in testing in favor of self-hosted options like MinIO)...
