you could create a communication protocol between the sensor and the application to be able to connect another sensor.

You might have spotted that comms with the actual device is handled by a service that runs in the background. This service has different sampler implementations that are specific to different types of comms (BLE and classic BT). But the effect is that the comms between the service and the app is an abstraction already. Yes, another layer of abstraction between the BT handling and the actual sensor might be useful, but when I looked at different sensors they all had pretty similar interfaces so I couldn't see the point in another abstraction (not least because I didn't need it). But please feel free to contribute one!

Go for it. I'll accept any PR that doesn't compromise functionality of the Erlang Fishfinder. By a "stronger sensor" you could mean several different things - are you just thinking of something that will penetrate deeper? Or are you thinking of CHIRP? Or better signal discrimination?

I'm thinking about CHIRP, 2d. a 500 -800 Khz sensor.

I can't think of any reason that wouldn't work, though it depends on the hardware. The CHIRP on our Raymarine Dragonfly is 200-350kHz but has a wide beam angle; their software uses the return to build a "3D-ish" image (they call it "DownVision"), so I assume that their hardware is able to tell the beam angle for a given return signal. Ping, as it's currently written, assumes a fixed beam angle (in theory 90 degrees, but more often 70 when towed behind a diver's surface marker buoy). I thought about using the GPS delta to estimate the "true" beam angle, but the GPS on a phone isn't accurate enough to make it worthwhile.
