[Bug]: model and error fields not consistently set in database #10937
Description
What happened?
The model and error fields are not consistently set on the message record in the database. This is, amongst other things, a problem when scraping metrics using the librechat_exporter companion app.

Steps to Reproduce
- spin up librechat and a librechat_exporter server
- write messages in librechat that result in valid responses and errors
- create a grafana dashboard visualizing certain metrics related to errors or input tokens.
