Custom variables in templates

First of all, thank you for these fantastic extensions!

Is there an easy way to pass custom variables into the templates? I would like to include some placeholders in the PDF templates, which can be filled via the backend. For example the phone number, IBAN, etc.

I would be very grateful for any ideas and suggestions.
