TLS, Docker configs, and repo housekeeping

README/docs: fix broken link, grammar (an Ethereum), reformat networks table, clarify compose example, add TLS/x509 troubleshooting
Dockerfiles: i think we should install ca-certificates, add healthchecks, use umask 177 for jwtsecret.key

docker-compose.yml: set consensus depends_on=service_healthy, restrict RPC ports (127.0.0.1/firewall)

Repo: create release tags, review & merge PRs
