LSDobserve: Add nodeSelector and tolerations anchor to values

This is mainly for LSDobserve but might apply for all charts.

Having the ability to global set a nodeSelector and/or tolerations would be beneficial to make sure the stack schedules on dedicated observability/infra nodes.

Happy to work on this but worth a discussion.
