rasterio>1.3.11 fails

If we do (with rasterio==1.3.11):

from rasterio.crs import CRS
CRS.from_epsg(3857)

It raises:

This is because latest rasterio==1.3.11 uses latest proj==9.4.1 version and sepal has pinned the latest available version of proj for this jammy:

I also have pinned the version in: fc38475

sepal-ui requires localtileserver which requires rio-tiler... all this chain installs latest rasterio if not pinned....
