Add ImportExcel as Prerequisie module #2

If there is nothing against it, I'd suggest to add ImportExcel to the module manifest as RequiredModules so it would get installed together with PSConfEu.
I can submit a PR, I am just not familiar enough with the build process. Would it be enough to only modify the .psd1 file in the source folder?
