Deprecate Python Version?

Spent an embarrassingly long amount of time trying to built stm32-rs with the python version on two different computers.

Got a load of weird issues with includes in the yamls (eg include paths sometimes had only the first letter of the filename after the path?)

Maybe note up top that the rust version is the canonical one
