Write Scribe-Server changelog and release v1.0.0

Issue

One thing to note is that once we're done with #41 and the final fixes for the server UI it'd be great for us to write a changelog and release v1.0.0 of Scribe-Server. From there, all further changes should be logged in the changelog as we open new PRs, and as we make changes we should increase the version.

Happy to collaborate on this and do the release!

This is specifically important as we have the page on the Scribe-Server changelog that's on the website that's autogenerated from the changelog markdown file in the repo :)

Hey @DeleMike and @axif0 👋 Assigning all three of us here so we can sync to finalize the release of v1.0.0 now that #41 is done. Let's discuss what else is needed and then we can maybe do a session to finalize the changelog 😊
