Breaking: replace key value pairs with slog.Attrs

Summary

Replaced the hacky untyped key-value pairs for slog.Attrs. Technically this is a breaking change but a quick GitHub search
reveals I'm the only one using this so I'm claiming breaking change privileges 🤷🏻‍♂️
