Originally, this PR was just fixing datapack files not loading, due to folder names being changed in 1.21.
However, I decided that it would be worth it to fix as many things as I could to reduce the number of PRs that would be opened.
As such, this PR fixes all the issues that I could find. My testing was much more thorough this time, so there shouldn't be any issues. If you have any concerns about the changes I made, feel free to leave a comment.
