- adds mcp server
- adds schema validation (this is important for ensuring invalid data doesn't make its way into the database)
- uses zod to validate the AI-assisted requests
- refactors the extract code out to its own file
- adds documentation (we might need to relocate this file to a more idiomatic location prior to submitting)
