2021 Release is here!

Some important changes:

• brew modified how to interact with cask.
• Since BigSur macOs uses zsh as the default shell
• Dropped iTerm in favor of Hyper.js
• Dropped oh-my-zsh in favor of Starship
• Removed most of defaults rewrites
