To test:

Install pixi: https://pixi.sh/latest/installation/ (linux: curl -fsSL https://pixi.sh/install.sh | sh)
In repo directory:
- pixi install (strictly speaking not even needed, because will also be done when running the next step)
- pixi run jupyter lab
