Update docker-compose.yml to include 7.0.10 container

Adding specific suricata 7.0.10 container since current builds version 8.0.0.

This is an enhancement we have been waiting for for a while! It will improve the dalton workflows massively!

I'm confused why this is a "feature we have been waiting for." It's expected that the user modify the config for his or her environment/use cases; no need to wait on anything. See also the documentation -- https://github.com/secureworks/dalton/?tab=readme-ov-file#docker-sensors

As mentioned by @whartond - it's expected that each user will customize the docker-compose file to meet their own needs.
