Added a separate CI job to test against the latest versions of dependencies by removing Cargo.lock
Improved caching setup for both default and latest-deps jobs using actions/cache
Included lockfile cleanup and adjusted git diff checks to ignore it in the latest-deps job
Ensures compatibility with latest crates and improves CI efficiency across OS targets
